Please weigh your ingredients
Streusel
- cinnamon = 8 grams
- I added 30 grams of large flake oats
- I added 35 grams of cornmeal (Baking with Dorie suggestion)
Cake
- vanilla = 6 grams
- baking powder = 5 grams
- nutmeg = 2 grams
- salt = 3 grams
- I added 1/2 teaspoon/2 grams almond extract
- I added 2 grams of baking soda
- I replaced milk with buttermilk
TIPS
- coat apples and berries in 1 tablespoon of dry mixture, this helps disperse evenly in cake- so fruit doesn’t sink to bottom
- place streusel in freezer while you make the cake - colder crumbs hold their shape better
The Bake
I choose to bake cake in a large ring pan. This allowed me to have a mountain of whipped cream and berries on top
- I added some raspberries with the streusel, If you do this add them halfway in baking- as some of mine got scorched

The Results
My rating of this recipe is 4 out of 5. I was a little disappointed in the apple flavour. It was barely noticeable. My suggestion would be to increase apples to 1 cup/250ml (2 apples) I would also add 2 tablespoons of apple syrup.
