Apple Berry Streusel Cake

Our 11th recipe to review from A Baking Day with Anna Olson is found on page 193; Apple Berry Streusel Cake.

I love that you can dress up this cake for something more fancy, as I choose to do. It would be just as lovely as a simple loaf cake per recipe.

Ingredients

Please weigh your ingredients

Streusel

  • cinnamon = 8 grams
  • I added 30 grams of large flake oats
  • I added 35 grams of cornmeal (Baking with Dorie suggestion)

Cake

  • vanilla = 6 grams
  • baking powder = 5 grams
  • nutmeg = 2 grams
  • salt = 3 grams
  • I added 1/2 teaspoon/2 grams almond extract
  • I added 2 grams of baking soda
  • I replaced milk with buttermilk

TIPS

  • coat apples and berries in 1 tablespoon of dry mixture, this helps disperse evenly in cake- so fruit doesn’t sink to bottom
  • place streusel in freezer while you make the cake - colder crumbs hold their shape better

The Bake

I choose to bake cake in a large ring pan. This allowed me to have a mountain of whipped cream and berries on top

  • I added some raspberries with the streusel, If you do this add them halfway in baking- as some of mine got scorched

The Results

My rating of this recipe is 4 out of 5. I was a little disappointed in the apple flavour. It was barely noticeable. My suggestion would be to increase apples to 1 cup/250ml (2 apples) I would also add 2 tablespoons of apple syrup.
