Instead of grating your carrots, try this time-saving tip. Buy matchstick carrots and pulse them in your food processor.
- I added 1 mashed banana
- I added 1 teaspoon/4 grams vanilla
- I added 1/2 teaspoon/2 grams Fiori di Sicilia (a lovely blend of citrus and vanilla) it is one of my secret weapons in baking
I omitted raisins and nuts - but both would be a great addition
I choose to ice my carrot cake with my new favourite icing from Baking with Dorie; page 92. A cream cheese- biscoff buttercream.
My mom has this wonderful flower shape baking pan, that I thought would be perfect for this cake.
My rating of this recipe is 5 out of 5. Wonderful flavour and a super moist cake. Everyone loved the not-so basic cream cheese frosting.
