Hummingbird Cakes found on page 17 from Bake the Seasons, is a beautiful Southern tradition.

I have made hummingbird cakes many many times at the bakery, they are always a fan favourite.

Weigh your Ingredients 

  • flour = 360 grams
  • baking soda = 7.5 grams
  • salt = 6 grams
  • cinnamon = 4 grams
  • I replaced turbinado with brown sugar = 550 grams
  • vanilla =12 grams

My mom has these beautiful pineapple cake mould pans, that were perfect for these cakes.

Cream Cheese Frosting
Adding so much icing sugar to a cream cheese frosting always makes frosting so sweet and sometimes you loose the tang of the cream cheese.

I added 2 tablespoons of buttermilk powder to bring back the tang to the frosting.

My rating of this recipe is 5 out of 5. I decorated cakes with some chopped pecans and chocolate covered pineapple.
